Cowgirl Creamery, just be sure it is ripe, otherwise it ain't worth the price.  Great when sold with age, triple over marked when not.

Fiscalini Bandaged Wrapped Cheddar is excellent.  They have 3 or 4 kinds that are also very good.

Vella makes some very good Dry Jack, go for the longest aged stuff, currently they are saying 2-4 years.  Had some terrific Cheshire style cheddar years ago that I used to make some killer Welsh Rarebit but looks like they don't sell it on a regular basis, if at all anymore. ??

We have some nice cheese here but pale in comparison to Vermont.]]>

Red:  1976 Freemark Abbey Cabernet Bosche pulled in 1993
Also a DRC La Tache (believe it was either '82 or '89) pulled in 2009 (but it wasn't my bottle)

White: 
1)Linden Hardscrabble Chardonnay Virginia 2001 pulled in 2010

2) Some gawd-awful Horton Vineyard product that TomHill thought might make me homesick.  Perhaps it was a Vigonier but maybe a Marsanne.  Damn thing was so oxidized and DOA we had to get a body bag for the glassware.  Vintage was probably 1978 or some such.

They way I see it, those festivals and tastings are meant to celebrate wineries that specialize in Rhone varietals and wines that try to maintain that fruit/spice Rhone style. If your 30/70 Mourvedre/Zin blend fits the flavor profile and you're pouring a couple other Rhone varietals and Rhone-dominated blends, then so be it.

If you show up with a Bordeaux blend with a token 5% Syrah thrown in, then maybe you shouldn't be extended an invitation next year....

I've been deep into the blues for a long time but NEVER played it on the steel because it wasn't a blues instrument and didn't come close to having a cool sound for the blues. I used acoustic slide guitar or lap steel with distortion. I got a new steel a while back and little by little, I realized it had a really fun blues sound. It was hard to get past my blues prejudice against the steel but now I can't stop myself. It's really fun. robert randolph and the family band is a young popular blues pedal steel guitarist doing a Duanne Allman style. Hubert Sumlin's slide on Howling Wolf's Little Red Rooster is a work of art.

Haven't drunk any Merlot for a long time so I can't comment.

 I'm background music for sure. That's ok. I don't weant people staring at me all quiet and everything.

			Just completed reading Turing'sCathedral by George Dyson (son of famed physicist FreemanDyson). What a great read that is...especially if you've been involved w/ computers for any length of time (I have.....hooked my card reader up, via its USB port, to AlGore's new InterNet thing back in the early '60's...by crackey). AlanTuring was a British mathematician in the '30's-'50's who wrote a seminal paper that provided the mathematical basis for computing machines (i.e. computers). There was a [b]huge[/b] amount of engineering going from Turing's paper to the first actual cumputer, the ENIAC, at the IAS (Institute of Advanced Study) at Princeton, Einstein &amp; Oppenheimer's home base.  This was mostly done under the vision of Johnny vonNeumann. The LosAlamos version was implemented in the early '50's, named the MANIAC. Some of the people involved were people I met when I first came to LosAlamos...so the read was of particular interest to me.

			Most of the wine on the bulk market, where negotiants get their raw material, isn't extra quantities of a winery's own product. It tends to be stuff that didn't make the cut to be used for their own wine (eg, not enough character, extra  of some varietal not needed for a blend, wine with minor or not so minor flaws). Given that they don't want to put it out under their own name, it's not surprising that they don't want their name used by the negotiant. 

Some negotiants look for the better stuff on the bulk market and put it out as is, at a value price. Others buy different lots and blend them, using the different lots to fill the holes in the individual wines, others buy stuff with flaws and try to fix them. So, unless they are making high volume blended wines, the negotiant wines tend to vary in style and quality level.

I had a corked 1990 Taurasi Radici the other night and when I decanted it, noticed some slight taint, but wanted to think I was wrong. When I tasted it, it was not totaslly devoid of interest, so I kept hoping I was wrong. But as always happens with these things, I was right, and a few hours later at dinner when the wine had warmed to room temperature and had some air, the corkiness was much worse in the nose, and I did not bother to taste it again.]]>

Spec's down on Hwy 290 (Ben White) right off of Mopac is the best of the Spec's locations. 

Restaurants with good lists include Congress (very broad list with a superb sommielier).  Olivia's is a fun list, lots of interesting choices off the beaten path....food friendly to the max. Both easy to get too.  Ulchi and its new spin off Ulchiko are awesome but sometimes very hard to get a reservation....sushi and much more.  Awesome expresso at Houndstooth on N. Lamar...best I have had out side of a place or two in the states and Italy

Best NY/NJ style pizza is Home Slice on South Congress  ;)

I do believe Grenache can stand on its own when 'treated well' - planted in the right area, perhaps some whole cluster to give it the midpalate that it may be missing and to add structure on the back end, no new oak so that the wonderful aromas are not 'masked', picked ripe enough to overcome the naturally bitter and tannic skins.

I dig the variety and work with both warmer and cooler climate sites - and have, up to this point, only added syrah to one of my grenaches - the first one I ever made - and this was to 'knock back' the candied elements of the warmer climate fruit.

I will be bottling a few 100% whole cluster fermented grenaches  in the near future - I'll have to get some of these into your hands . . .
