Style Weekly recently posted this formerly unpublished letter by Josh Ozersky about the culinary rise of chefs, restaurants and produce in Virginia. It'll make your mouth water.

It does indeed make my mouth water...and I live here!

By the way, the reference to oysters makes me remember... I know that the Burgundy dinner at Public Fish and Oyster got canceled by weather, but Pat and I have been there since. If you haven't visited there yet, you need to do so. Great food (and plenty of oysters of all kinds), friendly service, a great wine list and an owner who obviously cares about his customers, his menu and, especially, wine. Worth the trip to Charlottesville.

But for oysters in C'ville, head to Rock Salt (if you can fight the traffic on 29) in the complex with Trader Joe's. It's a sister restaurant to Rappahannock in R'mond and the child of Merroir and the Rappahannock Oyster Co., from the Middle Peninsula. Rock Salt is more beer focused than wine, unfortunately, but the oyster dishes are creative and tasty.
