Been a big fan of brining the bird for years but this year was invited to friends house for Thanksgiving with the caveat being we had to cook a turkey since they needed two. We were instructed to make sure to brine the bird since they were doing one also and of course brining is the only way to insure a moist and flavorful bird and yada, yada, yada. So, of course, I didn't brine the turkey. Just slathered some seasoned butter all over the thing the night before. Thanksgiving day comes. Identical turkeys both of which are cooked perfectly. Guess what? Absolutely no difference whatsoever between the two turkeys. Same mundane flavor you always get(it's all about the gravy and making sure not to overcook). My turkey brining days are officially over. Free at last...free at last!
