Domaine Billaud-Simon Les Vaillons Chablis Primier Cru 2010


The color has morphed from a pretty light yellow to more straw, but it still retains a tinge of green at the very edge of the rim. The nose is all lemon, hazelnut, chalk, almond and lemon grass. Not a hit of apple to be found in the nose, but on the palate as all of the aspects of the nose cross over to the palate, there in the mid-palate and carrying to the finish, apple can be found. The mid-palate and finish are looong, clean and refreshing. I don’t know if this is at peak or not, but it is mighty tasty just now. 13% alc. With salmon under a mustard crust and topped with a beurre blanc sauce. 03.31.17. Recommended.
