Hi all,

I made some meatballs and red sauce over the weekend, and I bought a box of perciatelli to serve with it, as I had never had this type of pasta before.

For the life of me, I can see absolutely no difference between this noodle and bucatini. Both are like long, thick, hollow spaghetti noodles, and they seem to be roughly the same length and size.

Is there any difference between the two, and if so, what is it? (Fabrizio, are you out there to help with this one?)

Here's what the Food Lover's Companion says.

bucatini: hollow, long strands, slightly thicker than spaghetti; bucotoni are slightly thicker than bucatini

perciatelli: thin, hollow about twice as thick as spaghetti ; similar to bucatini

How's that for clearing things up?

As Jimmie's reference so *eloquently* points out, the two are interchangeable. Either is THE pasta to use when making Amatriciana.

Yep, they are interchangeable. "Buca" mouth, "Percia" pierced. If I weren't wiped right now I would get up and look up the name of another 1 or 2 varieties that are essentially the same. There's one made of whole wheat flour that's used a lot in Venetian cooking. Bigoli??

I just gave the first exam of the semester to 200 Intro Biochem students. Evening classes were easier when I was a little younger. Feeling wilted right now, but getting "watered" ...

basically it's the same thing.
As far as I know the only difference is that they are called Bucatini in Latium and Perciatelli in Campania.
