Melon de Bourgogne
Has darkened to a brownish yellow, not amber, dilute rims but the surface shine is still good. Presents a doughy, yeasty nose, orange peel, wet chalk, lanolin, whisper of apricot to peach fruit, clearly aged but not that shot. Full-bodied, acidic and firm, needs time to open completely. Stays floral with lemon to orange peel notes. Earthy, gives you more chalk or wet stone than minerals. Lots of yeast that gets balanced out by ginger peel, honey and sour tangerine to blood orange citrus. The pear, peach, apricot fruit comes with a touch of cherry. Broad shouldered and not that fine, you'll get more power than finesse.
